Notice how he moves his head. Does it seem a little strange to you? With lots of emphasis movements, and very specific nods in certain directions for certain kinds of words. All NLP experts do it if you watch, they'll bob their head around, gesticulate wildly, sometimes wave a finger or shift their weight from side to side, and over-move their mouth when they talk.
I think perhaps that mirroring is what we do when we want control over another person, without the other person feeling any traditional conflicts (like "giving themselves over.") When we act like the other, but not mirror, we are in accord with them. Try it! test mirroring, then test doing. You'll find there is a much more unconscious you revealed when you just DO what the other does. You might even kiss.
I think he's just saying that you should do things similar/same as them to make them more comfortable/relate to you better. And personally i would feel like the person was making fun of me if they synchronized with me! so i'm guessing you should probably do it later or soon after.

What happens, when you get two people together, and one subtley notices he person's mirroring them, so that person starts seeing if they can get that person to copy them? Does the mirroring person just eventually stop if they can tell something weird's going on?

When she stopped, I stopped too. And when I started... she started too :) She doesn't see my foot directly [same as hers], but both are in her FOV.

I've been practicing some of the stuff out of the Bandler books. just practicing breathing at the rate someone else does, matching predicates, and speaking at their same pace that they do. Within a minute they begin to mirror what i do. it's cool! is that sort of the way the unconcious goes "I'm listening?"
You explain everything in such an easy way, you speak clearly and slowly enough for us with a foreign-language-mother-tongue (understand that "word" if you want to) to understand it easily. Thanks for posting
i've heard about this, i tried it on my friends, and they often do it back subconciously. For example if im talking to someone and i shift my position to leaning against a wall, often they will too to continue the conversation.
Would that be the same as the "pacing and leading" techinique for putting people into a hypnotic "trance".
I'm not a professional hypnotist, i'm not old enough to be, but i'm determined to become a psychologist or hypnotherapist when i'm older, and so i have learned how to hypnotise and have tried it out on friends at small gatherings. Nothing insane, just making their arm rise or something. But is the techinique the same as pacing and leading?

Do you have to synchronize the actions you want to mirror, with your dialog partner, or can you repeat them later?

Yes, pacing and leading can also be used to put someone into a hypnotic trance.
