  • When I made this, my ribs came out tasting too much like ketchup. I think the next time I make this, I'll reduce the amount of ketchup in the glaze considerably.

  • I love Chef John's recipes, but my only complaint with this one was that I didn't know how much of the dry rub to use, so I used all of it on my 1 rack (cut in half) and MAN, it came out wayyyy too salty. I'm now realizing that, even though he has you make a good amount of it, you're probably only supposed to use a light sprinkling on each rack. I think next time, I'll just use one teaspoon of salt with the same amount of other seasonings instead of 2 tablespoons.

  • @thatbastardson its a silicone baking sheet, easy to wash and non stick. would def recommend getting one

    Vietnamese people normally use it as a dipping sauce or a base for... well... our marinades. Because the flavor is so different and versatile depending on the way you cook or season it (adding other spices), you can use it in most recipes

  • you can find it in the same section of the store the soy sauce and everything else is at for Chinese cooking. It is kind of hard to describe it is a sweet thick sauce that is fruity but not jam like.

    (but it doesn't work with pork ribs, only beefback ribs)

  • Looks delicious! I have to agree with you about the silicone basting brush. After watching one of your earlier vids I went out and bought a couple and WOW, they are SOOO much nicer than the old bristle type basting brush.

  • Afterwards the ribs will literally fall off the bone as you go to collect them no lieing. There is a reason why the temp is lowered during the cooking process

  • Although you're right about Asia being large.. Hoisin is used in the cuisine of more than just 1 Asian country, therefore it's an Asian dish.

  • Hoisin originated in somewhere in China (maybe a province called Hoisin lol) but it is used all over East Asia and Southeast Asia and anywhere there is a China town or a Chinese restaurant. :)
