When I made this, my ribs came out tasting too much like ketchup. I think the next time I make this, I'll reduce the amount of ketchup in the glaze considerably.
chef john plz dont kill me, but i live in costa ricaa and I SWEAR i looked everywhere but i couldn't find the hoisin sauce sooo instead i used teriyaki and im sorry, but it still tasted delicious
Chef, you have the most amazing recipes! I could practically, smell and taste those ribs. The fact that you like your ribs, cooked exactly, like I like mine says it all. The "Yum Factor", is complete!
I love Chef John's recipes, but my only complaint with this one was that I didn't know how much of the dry rub to use, so I used all of it on my 1 rack (cut in half) and MAN, it came out wayyyy too salty. I'm now realizing that, even though he has you make a good amount of it, you're probably only supposed to use a light sprinkling on each rack. I think next time, I'll just use one teaspoon of salt with the same amount of other seasonings instead of 2 tablespoons.

I'm asian and I'll warn you it's sweet and tasty at first but after a while the only place you want to put the roast is your ass. Cos that's where it belongs.
why contribute to cruelty/death to living beings when its simply not necessary? in modern times, its very easy to live a completely healthy lifestyle and get our protein, iron, amino acids and vitamin b12 without causing death and/or suffering. professional athletes including nfl pro-bowlers, nba players and mlb all-stars all thrive by not only being vegetarian, but by even being vegan. bottom line: why contribute to death/tortute when you/we simply do not need to?
shut up stupid vegetarian grow some balls and eat some meat remembr a lion wud happily eat you if it was hungry like we eat pig, beef etc if were hungry its impossible to be healthy being vegen becos you dont get enough protein iron etc meat is a critical part of a diet and if you dont like it why thehell u watching this video? moron
to anyone who is reading this and is interested in unbiased facts, check out this list of famous, world class athletes. they are proof that its feasible to be healthy, enough to be an elite champion athlete, and vegetarian.
as for what lions would do, i'm not an animal nor do i use lions as my role models. we have more evolved minds (perhaps not PPPrulez), and many of us have a moral desire to do what we feel is right.
i'm age 30 and loved meat my whole life, until i became veg 3 months ago
were all animals the only thing that seperates us from lions is were differant type of animals and athletes usually have to drink absolutely disgusting shit to stay healthy eating meat is basicly like drinking water its almost unavoidable to do once in your life but w/e i cant be bothered to arguwe with a 10 yr old vegetarian hu doesnt understand when a video title says pork ribs they click it just to criticise i swear your worse than the dragonforce haters :l
@PPPrulez While I do agree I think it's stupid vegetarians are clearly watching an episode with meat, people are still inclined to be vegetarian and can be healthy being vegetarian (But I agree, I never got being a Vegan).

Im Vietnamese so I should know... Its NOT always for Phỏ.
Vietnamese people normally use it as a dipping sauce or a base for... well... our marinades. Because the flavor is so different and versatile depending on the way you cook or season it (adding other spices), you can use it in most recipes

you can find it in the same section of the store the soy sauce and everything else is at for Chinese cooking. It is kind of hard to describe it is a sweet thick sauce that is fruity but not jam like.

Looks delicious! I have to agree with you about the silicone basting brush. After watching one of your earlier vids I went out and bought a couple and WOW, they are SOOO much nicer than the old bristle type basting brush.
Afterwards the ribs will literally fall off the bone as you go to collect them no lieing. There is a reason why the temp is lowered during the cooking process
Hoisin originated in somewhere in China (maybe a province called Hoisin lol) but it is used all over East Asia and Southeast Asia and anywhere there is a China town or a Chinese restaurant. :)
