2___ Simmer until the sugar has dissolved and then keep on a rolling boil until you've got a thick syrup. Once there add 2 star anise and the rest of the wine (2 bottles total) and then gently warm through, careful to not cook off the alcohol.

1___ Add the peel of 1 small lemon, 1 small lime and 2 clementines, the juice of the clementines, with 6 cloves, 1 cinnamon stick, 3 bay leaves and 1/2 a grated nutmeg to 250g of caster sugar. Put on a medium heat for a minute or so and then add a vanilla pod split in half and just enough red wine to cover the sugar.
