  • I've always wondered how people can stand the salty beef; I've consumed corned beef once before at a hotel and lots of people seemed to find it delicious so I piled it on my plate. Once I brought it to the table, after a few bites, I couldn't stand the corned beef saltiness. >.<

  • @senseofeven I think thats why the potatoes or sometimes people cook it with cabbage those are bland foods that need salt so they balance each other out. My dad had it with mustard and a girlfried of mine would have horseradish sauce with her corned beef.

  • I crust my hash on both sides then break it all up and mix it together and then re-crust it, this works great especially if you have a deeper pan rather than a wider one, so you can crust the majority of the hash and get crispy bits throughout!

  • So I wake up, tired of eggs and white bread... Go to foodwishes, and I'm like "Chef John doesn't eat 'corned beef'!", "why am I even typing corned beef?" But what do you know? Chef John is super cool and eats everything, even poor college student food!

  • I always buy extra corned beef when it is on sale (around St. Patrick's day) and cook it, then freeze it to use for hash later. It makes it SO handy. Otherwise I never seem to have corned beef on hand. Sometimes I add a few whole red beets (which I chop) which turns the dish into what is called red flannel hash. Or, when I have left over pot roast, I make roast beef hash (no beets). YUM!

  • I've always been a fan of canned corned beef in my hash; it's easier than making corned beef when I really prefer the hash leftovers; and I just prefer the taste of the canned.

    You can get corned beef year round around here, but I still used the canned stuff. I think it tastes fine and honestly as a single guy its really the only option. I could get a full brisket but its really to much to eat in a reasonable amount of time without going into a sodium induced coma.

  • Very good! I was watching another video on Corned Beef Hash and had to stop when I saw a CAN of Corned beef getting opened. Leftover Corned Beef is the key to this recipe and makes a huge difference. LOVE the CRUST!

  • I made this today. It was really good. I bought a 1 1/2 lb chunk of corned beef from the deli counter that worked well for this.

  • Looks so good - not sure about the salsa, though. I do this using canned corned beef hash - trick is to add one whole diced onion and cook it in a stick pan so it gets all dark and crusty. Cook until is literally starts to burn and keep turning over. Top with poached or fried egg, of course. So good - who cares about cholesterol?

  • I made this today. I overcooked the potatoes, and I used salsa verde instead of tomato salsa, but it was still completely delicious. The poached egg totally makes it. Thanks for the recipe!

    How to cook it.

    put an inch or two of water in a skillet, add a dash of white vinegar. heat up to a boil then lower temp to medium heat. Drop egg in for 3 or 4 minutes and scoop out with a slotted spoon.
