You can know the cars are started cold, especially the second one, by the way it smokes a bit, by the noise and irregularity of the firing and by long experience, like after owning a series of 11 Ferraris as me, including 3 F40's.

This may sound a bit crazy, but you can relativly easily make any dual exhaust car sound like a v12 simply by placing a V shaped reed or tapers wooden splint into your exhast. just think wind instruments. No it wount sound like this but you can achieve a higher pitched dual note with realative ease.
