I checked two different Asian food stores, and neither of them had any ginger juice. They didn't even know what I was talking about when I asked. Maybe I'm not understanding something, but is there something I could maybe substitute instead of ginger juice?
@UniversalShrug that is a good question! when i say ginger juice, you grate the ginger and squeeze out the juice. i hope this helps... and hope it's not too late. maybe the salesperson doesn't cook that he/she didn't tell you this?! or maybe he/she thought something to drink! haha

@koto2211 potato is really easy to find in any grocery store these days its usually right next to the flour, but ive make something similar to this with corn stratch and it works well... but potato stratch is much fluffier
@Ichisokeno I've used rum in a very similiar fried chicken, and substituted potato starch for corn starch, and it worked out fine. but it wasn't Karaage..

@Pallina1897 Yes, in the US chicken thighs and legs are called dark meat because it is darker than the breast, which is called white meat. Also, beef is called 'red' meat and pork is considered 'the other white meat'.

@Pallina1897 Naw, It's cool. Different people call it different things. Today I have learned that in Italy, all flying animals are white meat and you learned that in America, chicken breast is white meat part (which is healthier) and the dark meat are the thighs. The beauty of the internet! haha
