Maria, you don't have to oil the pan, just marinate your steaks in bit of olive oil and bit of seasoning, than put these in to very hot pan, effect is 10 times better than putting oil in to the pan. Also tenderize your steaks. They cook much faster and are really tender.
I agree. In fact, adding oil to the pan will likely cause a lot of smoke on the high heat needed to sear meat. Best to coat the steak first then sear it. Otherwise, great vid. LOVE the kitchen!
also add mediterannean sea salt add ash from cigerette, rub evenly across steak ,make sure to tenderize the steak by rubbing it across every inch of your kitchen floor. spice things up a bit by hammering it with a jagged rock

This was a pretty good instruction video. The only thing I would add is to put about a half inch of oil in the pan and after you add the steak pierce it all over with a knife a whole bunch of times so that all the juice run out. Then, put it in the oven for an hour at 450. Remove from the oven and put construction glue on both sides. Then drive nails into the center of the steak. Then smear peanut butter over the steak and nails. Then add a whole bunch of chili powder. PERFECT STEAK!

best time to sear/know when your pan is hot enough, is to look at the oil. first the oil will ripple (not boil), then when you see the first slight whisp of smoke coming from the oil, thats when you add your meat for searing.

I've seen this same method,but with two very different times and oven temps.I guess I'll split the diff between your 2 min searing and the 30 sec I'd seen prior.I also saw 500 as the desired oven temp for 4 minutes.I'm a little confused,but adding the oven to the process is a real help

Hey Maria, I just noticed you coated the pan with olive oil. I was recently told that grapeseed oil is better because it has a higher smoking point, therefore doesnt burn as easily.

Nice video but they need to improve the sound and lighting - it's like cooking in the dark. I'd have also have liked to have actually seen the steaks but hey it's only a rough cookery guide
