yes you can either play one player (you can decide it just before the match) or you can enable (by switching a certain "0" [in the user.ini data) to a "1") the feature to play all the players like in Fifa e.g.

Thats a good question.
This version still has a lot of bugs. Like previous versions.
And my guess is that FM 09 will also have a lot of bugs.
Same story every year: few changes, lots of bugs.
