I carve it the same way, been doing it for over 20 years that way. However, I make very thin slices or else you would only be able to feed 6 people, lol. I also use an electric knife, so much easier.

I do the same, as far as cutting along the breast bone. It makes it a thousand times easier to carve when it is off the bone.
