Very nice Scott! I was in VP-92 before it decomed, Where were you an Engineer? I am in the planning stages of a 737NG sim myself. I have a few things such as 737NG Pilot seat with J-Rails, and a few misc parts. I hope to start the actual build this summer.
As for the fuel temp gauge, no it is not a working guage. It will light up and you could apply power to make the needle move and by adjusting the current you can control how far the needle moves but there really isnt anyway to interface that and I dont believe fuel temp is modelled in the simulator software anyway. It is really more for looks.
