Chet Aitkins is worth checking out. Django Reinhart(Jazz). Diego Del Gastor(flamenco) Paco De Lucia(fla). And modern acoustic as well, Mckee(if you don't know of him yet, thanks to youtube he is already revered) John Clarke(not a legend but a good spanish guitarist) many many others.

But thinking about the effort it takes to get good, I defy anyone to deny the technical ability that some of those guys had, anyone who can play a power chord should be able to appreciate the craftsmanship. I could play and improvise blues relatively early on, because it took much less skill by comparison. I'd bet good money you haven't got the skills or coordination for metal. As for whether it's music or not, it's founded on serious musical principles, and just as valid as any other type. Whether you like it or not is irrelevant to that fact.
