Actually, you didn't put too much butter in the pan.... Here's what you did wrong -

1. You overheated the pan FAR TOO MUCH!! When your butter hits the pan and immediately smokes and browns, your pan is TOO HOT! But you knew that, didn't you?!

2. You should break the eggs into a bowl and whisk them before adding them to the pan - if you want to make anything resembling a true omelette.

3. You cooked the shit out of it - WRONG! The eggs at the centre of a true omelette should be soft!
