I have a suggestion. Why not get enough track to make the standard track plan layout twice. Once you have built a surface large enough to hold that, freelance with the track until you have something you like. How do you like that idea?
@KnapfordMaster98 For the most part, have done that already, and I have made several changes to the design, the biggest issue is real scale, since the middle is supposed to be big enough to fit myself in, that I haven't truly estimated and it's the only thing holding me back from a final design.
@PokelordEX Why not create a dough nut shaped layout with a small island/extension in the middle with a terminus and yard on it. Or, marbe you could cut the oval shape and make it a straight line so you could do a huge shelf layout with a runaround track, or maybe even a turntable at each end.
I think that this is a great layout plan. Hornby Virtual Railway 2 is a great tool for planning layouts, I heard a HVR 3 is coming out in a couple of days and will be the final one in the series.
I love your idea of modelling Wellsworth and Brendam, it will look great I'm sure of it. I'm thinking about modelling Sodor myself :)
that station you want to make better, instead of the water tower put another platform and footbridge, if you wanted, you could even put a water column on the platform.

I recomend for a diesel yard, a couple of scrap engines, which you can make from actual electric trains, ar just use take alongs or something
