  • If I go see my butcher shop and ask for a 4 rib roast, I get one twice that size, this one would be called a 2 rib, rib roast

  • I had a 6 pound roast in the fridge, then happened to que up this vid. Damn good thing I did. I threw this on my smoker, but backed off on the smoke. I had the pan, garlic, grill, stock and veggies. I added some herbs and oil, but other than that that, I followed the plan. Turned out great! Once I had it in the kitchen and it had set for a bit, I started carving. All was great until my wife noticed I was throwing all the trash on the floor.....not GEWD. The roast was perfect though....

  • I was looking for the perfect recipe to cook this cut today, on Thanksgiving. And now that dinner is done, I give thanks to you guys.

    The roast was simple delicious perfection.

  • What do you guys think about dry aging the roast before cooking? I picked up a rib roast to do on the grill in a few days and haven't decided if it's something worth doing or not.

  • I'm a big BBQ guy myself, but i've never done this Rib Roast Beef. So I'm wondering, why cut the ribs loose only to tie them right back up? What am I missing? Thanks.

  • @mebkick01 easier to carve when the roast is done, but the rib bones remain in the roast for added flavor, and for the Pitmaster to savor for himself after the quests have gone....!

  • that shits "well done"...not "done well" (overcooked)....rare all day is the only way....good job tho...just cook it less if you like juices (thats where the flavor lies)

  • anyone know why the ribs are cut off before cooking and tied back on? Wouldn't it be easier to cut them after the roast is cooked?? Is it to get smoke flavour on all sides of the ribs or something??

    Roast looks great - making this tonite, just not sure why you'd trim the ribs off so early.

  • @douglasenviro this quite late but i didnt see anyone else replying to it. my thought on why he cut it before cooking is so that the meat around the bone would be cooked

  • @RandyD4 I've just done my first in the oven. Well, it's not that great. I need to do something different, that's all. I bought my meat in a supermarket instead of a well-established butcher. I put a can of beef consomme with veggies in the bottom of the pan. I massaged the beef with some jerkey spice, and left in the oven for 1h40 at 350 degrees. I took it out when the digital thermometer showed 162 degrees. It had the consistency of rubber in some parts...Too dry.

  • Yorkshire pudding and roast potatoes (cooked in goose fat) are the best sides for this dish. Dont forget the horseradish sauce for the beef!

  • Oh yea horseradish!! On beef horseradish is fantastic. Of course a bloody mary will marry up this dish just fine.

  • I like to put the garlic cloves under the ribs before I tie them back on instead of cutting slits in the top but it's great like this too. It just saves time, its no better

    I like to do the roast very rare and put slabs back on the grill directly over the coals just long enough to put grill marks on the meat for those who like it rare, a bit longer for Med and WD.

  • That's a good technique. Some people like their beef hot and rare might be to cool for some to eat.

  • I think when I can afford a rib roast I'll grill it ! I have cooked many and I always,always let it sit on the counter for 2-3 hours until it comes to room temp.More tender outcome !!

  • Funny enough, I have been thinking about that receipe for weeks. Over here in France we do it both ways, with beef or with pork. I have done a pork one few weeks ago with 8 ribs: it was an outstanding BBQ meal!! By the way, 2 other videos that I am waiting for : a full Turkey leg (we have some over 6 pounds over here) and a so called "Côte de Boeuf" thick enough, let say around 3". Pit Masters, back to your BBQ!! If you never had one of those, you are missing something out of your life...
