You shouldn't have to add any butter in a good flourless chocolate cake, the one I make consists of 4 eggs whites, 2 egg yolks, 1/3 cup of sugar, 1/4 cup cocoa and a teaspoon of baking soda. Thats it, no butter, no milk, no oil. The only fat comes directly from the eggs and cocoa. Its more like a chocolate mousse cake, very light but rich so you dont tend to want a huge slice despite the little amounts of sugar and cocoa.
