120 degree "hot" water was dreamed up by some federal bureaucrat. Better to put a limiter on the tub/shower and set the heater to 150. Having the heater at 120 is asking for a bacterial infestation since the extremities of the system won't ever even reach 120; it takes at least 140 to sterilize water. 110-120 also sucks at getting laundry clean and keeping the machine from stinking.
Moen, Grohe, Kohler, and Hansgrohe use anti scalding devices in their cartridges. Some new systems will automatically shut off if the water goes over 110 degrees. But a lot of older, unrenovated, or homes that aren't too upscale don't have that luxury, so it is best to set the hot water at the heater no higher than 115 or less.
