Usually cured. But, I had it once when i caught 2 Mahi Mahi's, and the hotel people cut it, and then i just ate it. They didnt cure it. (of course they took out the blood and stuff, and washed it. )
lol, Hardcore. I think it's more like, PREFERABLY cured. Although, I'm not sure. I worked for a fish market called Browne Trading, and all the local sushi bars bought cured tuna and salmon from us, nothing raw.
if you are talking about what he first put in the pan for the sauce they are shallots... Little purple colored onion family used in many sauces. Your grocer will have them loose like your onions or in little mesh sacks with three or so in the sack.
I enjoy the flavor of olive oil in my cooking, so I have a tendency to use quite a bit. You certainly don't need as much as I used when cooking with a non-stick pan, it just a matter of personal choice.
I made this! Delicious! nice dish to serve to guests. I served it with risotto.
