Adding ABS into the variable may skew the tests slightly, bridging the gap between tires with high depth and low depth.
I see what you mean, and agree that it's a good idea to turn it off during the tyre test, but it did seem a bit harsh on the people estimating stopping distances who might have assumed the car had ABS.
