@shallenlynn Mozzarella would melt, which wouldn't really get the same consistency as this. I think tofu would probably be a better substitute. Paneer stays pretty firm even when you cook it, and tofu would, too.

Curry leaves can be used instead of bay leaves. They can be found in most Indian grocery stores.
