Not Cuban I agree with the other Cubans who commented, I grew up on Cuban food and learned from my grandmother and other Cubans we dont use a dry rub Cuban inspired however yes which is just fine.

they were black beans, however I had cooked them with tomatoes and other things so they do look like red beans....but..they were black....Cuban's prefer black..Puerto Ricans prefer red beans...

i have my roast in the oven now. it's just about ready. i did it different, though. next time i will try this recipe. instead of the oranges, i used naranja agria (all cubans use it), some mojo, and a few other secret spices. i left it marinating in the fridge for about 48 hours and i cooked it @ 200 degrees for about 6 hours, wrapped in foil. i just unwrapped the foil and am cooking it at 300 degrees for 25-30 mins. i might fry it afterwards for a bit-o-crispyness. mmmm!!!!

My mother makes roast pork (pernil). She makes a paste of fresh garlic, pepper, salt and rubs in all over the pernil. she makes holes in the pernil so she can infuse the meat with the wet adobo or paste.

really depends on how much fat your particular piece of meat had.
And, although I cant remember that far back, when filming we use swap outs...finished dishes that sit around awhile before being used as "finished dishes" on camera, so it sounds like you did it just fine.
Many people have made that dish and really loved the results. I'm glad it worked out for you. In a few weeks, we travel to a farm and get a local pig, we'll be filming an episode of our PBS series using that pork.
