Not tried it on the 3G but I think it's becoming more and more clear it's an o2 network configuration issue and that I suspect it would be the same on any device.
This isn't an error of the network, it's just a technical limitation.
O2 has a GPRS Class B compatible network only.
Vodafone's network has a functionality called DTM (dual-transfer mode), which allows simultaneous voice and data. Only certain phones support this, but if yours doesn't (apparently iPhone doesn't), data will suspend while a call or text comes through. This only happens on Vodafone though. Orange and T-Mobile don't do these things either.
