  • Girl, I cooked this last night and we are still licking our finers AND today we tried the potato and shrimp chowder....it was some kind of good.....THANK YOU....GREAT VIDEOS AND INSTRUCTIONS ARE EASY TO FOLLOW.

  • rice must be washed, its been imported from far east india etc, obviously its been exposed to dirt, along the processing and packaging. please no short cuts with cooking. still looks great.

  • Washing rice has nothing to do with hygiene. You wash certain rices to release the extra starches so that when you cook it, it's not mushy but firm. It has nothing to do with making sure its "clean".

  • She cooked fantastic but most black women wash their rice--very particular with hygiene especially with body first then food.

  • is it better to use block of coconut cream instead or the can... alot of people do leave the bone it but its more flavor whenn the bone is left in

    Reneil the dish dony taste too bad!!! I need a little practice but not bad at all! I tried to find coconut oil but no one knew what I was talking about so I had to use vegetable oil

  • @glazese Not sure if you are mistaken or I am but in the west Indies we wash our chicken add spices and leave it to saute for a period of time. So I think that she washed the chicken previously.

  • This recipe must be from a different part of the island as I could not serve ANY of my family unwashed chicken. You already have coconut and the sugar? Together with all the starch from the rice! Dang! If you saw the process rice goes through, you would wash it.

  • Hi Irie! Thank you so much for posting this. My Jamaican friend used to make this for me every day and I lost his recipe and lost touch with him. I was never able to find any dish that resembled his.  When I saw your video, I got so excited and I cannot wait to try this because it looks exactly like my friend's dish. My mouth was practically drooling watching this 2 AM in the morning...hehe!

  • I absolutely love brown stew chicken and I could not find the right recipe anywhere. I actually followed one and it wasn't anything like the brown stew chicken I was referring to. Thank you so much for your recipe and your video. I followed everything to a tee (except for the hot spices) and omg....everything turned out delicious!!!!!   • CONSTRUCTIVE CRITICISM ALERT: I think the food looks amazing, however, for novice cookers, it would be so helpful to break it down from the top in your future recipes. Including how to make the peas from scratch, what the pan actually looks like before the food goes in because it looked deceivingly shallow, the seasoning of the meat the night before, etc.

    Other than that it looks fantastic!!

  • Oh no thats the browning. You should be able to get bottles of it here but probably need to go to a West Indian shop or something like that. theres a few brands available I just bought some by NuPak

  • was it the habenero pepper sauce? I would think you could use hot pepper sauce Grace do it is small bottles you only need a few drops its soooo hot!
