According to ITTF rules..

for a service, the ball must openly rest in the palm of your hand before throwing it up 6 inches without imparting spin on the ball.

so technically you need two, but only one to rally.

If you do not have a second hand, there is a handicap in your game from the start. But also for the ballance of your body a second arm is importand. To play at such a high level as she does it is very great.

Not in Table Tennis, they have a serious ranking system based on points and earned records over their whole career and it's very intricate and well done. In a tournament there are only a half dozen upsets in the matches usually. You saying that you could beat someone who is top ranked when you're a nobody is just stupid. People are ranked what they are for a reason, and it's not like in football or a team sport.

The only get to face higher ranked players in tournaments is if you win all your draw matches to get into the highest division and only among those players do the upsets happen. So it's not a nobody beating a high ranked player, it's a high ranked player beating an even higher ranked player.

And other sports don't have a realistic ranking system, like college football, a table tennis player may play as many matches in a single tournament as a football team plays in a whole season.
