In New Zealand we call Sea Urchins 'Kina'. The way we like to eat them is straight from the shell to the mouth. I crave for these all the time.

there is a way easier way to open them...you get 2 spoons put them back to back work them into the mouth then pull spoons apart...shake all the black stuff into the sink the roes should stay in place..happy eatting do try...we eat these in my country (nz) all the time we call them kina. :)

o geez to be honest i hardly resist to not eating something, i like to eat all but sea urchin is one of those things i´ve never found the taste, it tastes like the leather of a shoe :s or perhaps is that i havn´t eated a good nigiri i don´t know i was very young when i tried it and i would like to taste it again, maybe i can find the taste now better XD
