Uighurs are of Turkish descent, so bagels may have originated in the middle east (from who knows who), and then traveled with the Uighurs to their eventual home in Central Asia & "Xinjiang"/East Turkmenstan... or yeah, it may have just come to them along the trade route.
Hard to say. Tibetans (their southern neighbors) were mostly nomadic (no farming, no grain, no breads), further east they grew wheat, but they mostly steam their dough.
My guess is it was a Middle Eastern thing they brought.
@milvipes They are not bagels you, bagels must be boiled in hot water before baking in ovens and bagels has a whole in the the middle. These are small bread cooked in tandor clay ovens. - Taste beter than any lower eastside NEW YORK CITY bagel.

Mostly likely it came from the Middle East, not necessary Jewish. Or it could have developed independently in SE Asia.
The uighur version is much tastier though, than the bagel.
