Adobe After effects, you can find tutorials online! Called masking I believe! But I could be wrong!

go watch the buteryass mondays where donovan explains how to do the kung fu effects. he shows you that you have to overlap the film over each other but in this case you would have to move the next clip al little foward by a couple of seconds later. also you would have to keep the camera still when you film
