@Gfuruguen, I hear ya. But Landon was near death at this point, and Carson just wanted to make his dear friend laugh, to make him feel good. This whole thing was a bit that they prepared to entertain Landon. And by the way Landon was laughing, I would say Carson succeeded. These two were close for many years and it shows.

That "Menu" was painfully obvious to be a prop prepared by the show's art department. How Carson thought it would pass, I have no idea. Audiences are truly stupid. The whole thing is obviously just a "bit" that never really happened.
Michael Landon probably died from embarrassment well before the cancer got him.
