  • wow a medium size`pizza with just a little bit of douqhh..oh and so the bread crumbs is the key so the pizza dont stickk..no wonder dominos' pizza has like little crums on the douqh...i always used to oil the pan and it would still stickk

  • that's actually a great idea to pre cook it and then transfer onto your pizza stone. i've tried so many times putting my pizza together on a pizza peel, but failed a half dozen times making a complete mess. bravo :)

  • @MsPcTutorial Alex, I could show you a few things with wood fired ovens too, just adding the stucco and front bricks to a recently built oven. I have cooked with wood fired ovens for 20 years !

  • Yes, especially If you are in the desert and only have the sun for heat.

    But foil leaves a nasty taste on many foods. I would use a pizza pan, like all the pizza places use.

    Real pizza places use brick ovens, not pans.

  • @etrnldrk Right you are, this was made in winter and our brick oven is outside, so we sometimes use the gas oven inside. The secret is the stone.

    to me they both taste pretty much the same

    Place on a floured surface, divide dough. We like to make several batches and freeze them in individual bags. If you do this remove dough from freezer at least a few hours before use. It can remain in the refrigerator for several days. A perfect crust is achieved by baking your pizza on a pizza pan at 450 f. and sliding it onto a pizza stone for the last few minutes to get a perfect crispy crust.

  • CONTINUED -

    Method - Place yeast in small bowl, add sugar, pour warm water over it and let it sit for 5 minutes. In electric mixer use dough hook add flour, salt - blend for a few seconds, add olive oil, flour, salt and yeast mixture Knead with dough hook on low speed 5 min. The dough needs to be soft/ firm to the touch, add more water for a dry dough add more flour for a wet & sticky dough.

  • Chef, i wanted to ask you something... why do you put bread crumps under the dough ?

  • Hi, Good Question! It makes it slide easier off of the pan and onto our pizza stone (in bottom of oven) and it keeps from sticking to the pan during assembly. To date, I have made over 10,000 pizzas.
