I don't like the version where they add corn or carrots. I prefer to make mine with just pastry, bacon, eggs and peas. For a bit of extra flavor I will sometimes use minted peas instead of standard peas!
Lamingtons are very big in New Zealand and Australia as a treat. I have never seen a Lamington done as a cupcake before. The sponge cake is normally cut into Square cubes and dipped in a chocolate or strawberry icing and then rolled in coconut covering all 6 sides, or a small cake is fully covered on all sides and called a Lamington Cake. I think you might have just invented the Lamington cupcake!

You should have used bitter-sweet chocolate ganache. It's easily made by mixing chocolate with cream on a one-to-one ratio (by weight). I think you should make the german chocolate cake featured in Butter-Flour-Sugar-Eggs next. It's super easy and it looks and tastes amazing.
