When I defrost it in water I usually stick the meat in a plastic bag first, so the meat doesn't get unnecessarily wet and maybe some of the flavor and stuff is washed away.
This is a pretty well known method, but not explained particularly well here.First wrap your meat in a bag so no water will get in (double bag it just to be safe). Make sure you get the air out. Put the bag in a bowl in the sink, and fill it with cold water. If you suspect it will take longer than an hour to defrost, leave water slightly running into bowl (make sure you're not covering the drain!). If you're really in a hurry, you can microwave it on low for 5-10min first, then use water.
@mattmax11 If it's on low, then no, it shouldn't. Obviously use discretion depending on how large/thick the meat is in terms of how long to microwave. The meat should only be barely pliable after microwaving; not warm at all.
