  • Cracks me up all the people that say your wasting meat on all the vids.its common knowledge that belly meat is where the majority of fat and toxins are, if you want to eat it...go for it ...but dont say someone is wasting meat when they are cutting off the meat that is not good for you, most of us catch enough fish that we have plenty of good meat to eat.

  • Okay don't be dumb thinking he wasted alot of fish... People hate eating fish and getting a bone in their mouth it hurts that is the correct way to fillet that type of fish same as a catfish. They are not large fish so the meat he tosses is about 90% Bones. learn something.

I say eat it the right way: finding the bones and picking them out. Adds entertainment to eating, if you ask me. It's like 'Ok, find the bones!' and gives you something to do other then just shoveling it in.

  • Dude, the meat is all messed up...there's no way you can put that on a dish in a decent place without the customer throwing it at your face. However, seems useful for industrial uses I guess...maybe for some fishburgers or fingers..

  • That was fast, and there was NOT 40% wasted flesh. Looked like he got all the stuff nobody wanted, head, guts, spine. Kept the fillets. This is good in my book.

  • where do you see 40% wasted? That was super fast. I fillet 60 pound rock fish. Big difference. If you're not careful you will waste fish. But that guy was fast as a bastard. Quit trying to dog everything. I guess the purpose of the electric knife if you fillet fish all day long it will save your arm.

    You're right, 40% is probably a little high, but when you look at the body, the portion of the fillet he nips off, and then when you look at the size of the final fillet compared to the size of the fish he started with you can see that he lost a lot of meat.

    I butterfly trout, salmon, bass and other fish on a regular basis, and I can tell you that, eventhough I'm not fast, I lose a small amount of meat by comparison.

    He took a 2 or 3lb fish and pulled two 1/4lb fillets off of it. That fish probably had about 1lb of meat on it at least, so with that in mind, yeah, I'd guess about 40%.

    He cut massive amounts of meat away as a method of boning the fish instead of taking the time to recover the meat by boning with a boning machine or even tweezers.

    His skinning was immaculate, though.

  • @plasterdbastard Its more than that, 2 western boneless fillets for a fish, skin off, is an average of 34% of the total weight. Whilst you may say that it's an incredibly wasteful process, and that there is such a huge percentage of meat wasted, it's not that great, the bones, organs, skin, fins and waste add up to a large quantity of the fish, the meat left on the frame and on the head would only be about an extra 8 percent of the fish, and, that's stuff you can't be fucked eating anyway,

    I just cleaned a 4lb trout last Saturday that my buddy caught and I pulled 3lbs of meat off of it. That's skinned fillets. That's 70 to 75% of the weight. If we look at this striper, the body composition is very similar to a trout in terms of meat.

    All you need to do is be more diligent and use the butterfly technique. Separate the rib cage from the meat using a sharp knife and keep your cuts tight to the side.
