Alton is so awesome. He demonstrates, informs, and entertains all at the same time. The only diffculty Good Eats poses is whether I am more excited watching the show, wanting to try the meals, or showing off the newly learned information. Brilliant.
@arequipa well he did a show all about diets because he went on one and lost a lot of weight. He was watching the show and realized how heavy he had gotten. So i dont think he is sick or anything.
I like how he measures the spices down to individual pieces like "4 pepper corns" instead of the usual "oh throw in this small bowl of "spice" in". Makes the watcher actually able to recreate the recipe to the T!

He doesn't mention one of the best parts of these kinds of fish; they are very inexpensive!! I picked up tilapia fillet from Wal Mart for $2.00 USD a pound the other day.
I do my part for fish conservation. The only time I buy Tuna or Salmon is if I'm making sushi rolls. Around here it's usually Trout, Mackeral or Flounder. My roommate makes these awesome fish burritos with flounder.

The only thing I don't like about this show is that he keeps talking about america which I don't think is good at all, otherwise everything is just perhaps the most entertaining cook show ever.
i think it's good that he wants to have americans support american raised or made products. what's so wrong with supporting domestic products considering that we have more strict product control rules than other foreign agencies?

Alton Brown is very creative and inventive, both with food and video presentation,plus he is just down right smart! He also has a pleasant and cordial personality. That combined at 350 degrees makes Good Eats!
I honestly think he does it to mix things up and show people different methods. Also those fish didn't need as much cooking as the pork sot he whole heat insulation issue probably wasnt that big of a deal.

HAha, I found this episode delightful. and you can tell that Alton's daughter really enjoys hearing her dad talk. haha, How nice, I can see "Future Eats" with (whatever her name is)
But yeah, fantastic show, and to top it off, I grew up eating Escabeche (yes that's how you spelled) (and am mexican, its a common dish here in mexico) although we ate it with a native fish rather than trout, and of course, the Escabeche tecnique is also good on Beef, Chicken, and my personal favorite: DEER!
