There must be two completely different versions of Pad Thai sauce, because the one I know of that all the local restaurants use is the equal parts fishsauce to sugar recipe. I've tried making the tamerine version and it's a completely different flavor.

Where's the fish sauce and lime juice. I know you can sometimes substitute tamarind for lime juice although I use both, however, fish sauce is the essential salty part of the sweet, salty and sour combination of favours that make pad thai so delicious.
@LilMermaidFairy I have never heard of salt being substituted for Fish Sauce which is an integral ingredient in many Thai dishes and in Pad Tha in particular.

This is a very good, informative video. I'm vegetarian, but I agree with Zepres - pad that sauce w/out fish sauce is missing something... much less tasty! Sadly there's no real substitute for fish sauce. Soy sauce has a totally diff taste. As for the garlic, I say bring it on :) Anyway, you wouldn't use all the sauce, she's making a large amount to store in the fridge.

Ghastlymess, did you know that tamarind comes in two forms? the watery pulpy kind you have, needs to be properly prepared before hand before you use. It requires being siffed to remove the pulp. You can buy it allready prepared in concentrate as you see here. This is more like molases. I buy one on amazon for $5.95. Do a search if you like for "Thai Tamarind Concentrate - 16 oz jar" It comes in a funny oriental blue colored container. Also, Instead of vinegar I use Tiparos Thai Fish Sauce

Any vegetable cooking oil is good. Not Olive oil, cause it burns too fast. Enjoy cooking and have fun with it.

its better to heat the wok and THEN pour the oil in. the oil doesnt stick to the pan this way.
