perfect except i perfer to put the oil on the steak not the pan and gently rub the salt pepper and oil onto the steak so you dont loose so much. hot cast iron pan is awsome but realy hot coals on a grill are even better :)

Your steak looks AMAZING! I watched a similar video to this one by a guy named Nicko and although the technique was similar his steak wasn't anywhere as beautifully crusted as yours. His actually looked like pale cooked pork chops.

On another steak note, another chef on here only put olive oil on the steak, not the pan, then seasoned ...have any thoughts on that?

You have to be able to do a million things at once, and that level of awareness comes with the cost of looking like your high off of coke, haha! I do this even when I'm at home.
