hm, I was taught to prepare Sauerkraut with onions, apples, JUNIPER BERRIES (ger: Wachholderbeeren) some caraway seeds (I grind them), little sugar, wine and chicken broth. Shortly before serving a small raw potato is grated into the Sauerkraut, which serves at a bonding agent.

Also, American Sauerkraut is way more sour, and has a very penetrating smell to it. I'm lucky enough to live close to a German market, where I can buy my Mildessa or Kuehne Kraut. So do more and more Americans

Yes, froth-control, I know that american beer has not that much froth, has to do something with the german beer purity law, if you mix the beer (after brewing) with water it won't develop that much froth. A 'pure' beer will keep it's froth for several minutes.

Ich persönlich bereite mein Sauerkraut (ohne Speck!) und die Bratwürste (Margarine statt Butter) zwar etwas anders zu. Aber die Idee, der Welt typisch deutsches Brauchtum in Form eines solchen Videos näher zu bringen, finde ich ganz hervorragend!

margarine würde ich an deiner stelle garnicht verwenden! da sind (wenn auch wenig) ungesunde fettsäuren drin, die beim härten von pflanzlichem fett entstehen. also wenn pflanzlich, dann ein gutes öl.

und zur butter: die verbrennt in meinen augen zu schnell, daher nehme ich butterschmalz für die würste, also geklärte butter) und gebe erst ganz zum schluss noch etwas butter hinzu.

Very entertaining. I like the expert way you pour the beer into the stein. One small boring health issue though. You didn't really need that extra butter for frying.
