The advice the London Fire Brigade gives is consistent with advice given nationally. It is based on national statistics which suggest that you are less likely to be injured by a chip pan/hot oil fire if you:
- Don't move the pan.
- Turn off the heat if it is safe to do so.
- Leave the kitchen, closing the door behind you.
- Get everyone out of the house.
- Call 999.
- Don't go back inside for any reason.
- Never try to put a hot fat fire out with water or a fire extinguisher.
The London Fire Brigade recommends that you do not try to tackle a fire yourself because fire extinguishers and fire blankets can be dangerous if used incorrectly, its important that you are trained before using these items in your home.
If you have a fire in the kitchen, the advice we give is to: turn the heat off if you can, get everyone out of the house and call for the fire service.
in my opinion, chips are better grilled or oven baked, which is much safer and healthier than using fat in a pan.
but if you do want to do it that way, I recommend a deep fat fryer with a thermostat over a potential dangerous chip pan.

need to add to that..... also anyone who cooks chips with oil in a pan should have a fire blanket.
if it's safe to turn the heat off, then a fire blanket placed over the pan, if safe to do, will stop it spreading and smother it the fire.
as for a fire extinguisher, I don't rate them well. except in the very early stages of a fire.
as fire spreads in seconds, a fire extinguisher of the right type is only any use if you know how to use it and it's within reach or very close by.
