They aren't. Shu and Mio(boy and girl with cellphones) are using modern magic (Shu - technology and Mio - root). Basically every modern machine on Shu can serve as a weapon for his magic. Shori (girl with grey hair) is using classical ancient magic, she studied at INDEX - largest magical association in the world palced at Vatican. All mages in the game are currently belong to this organization, but unlike Shiori, Shu and Mio learned magic from their family hence it is kinda specific and unique.

To be honest, when I was playing the 11 eyes visual novel, I seriously forgot it was a H-game. Imo, some h-games have such a good story that the moment it goes into the Hentai part, it kinda destroys the game.

No, it's not a sex game, and it depends on which version you're playing. 11Eyes is an eroge visual novel while 11Eyes Crossover is just a visual novel. Go check on wiki what a visual novel is because it's really hard to explain. But no, you don't go around fighting, you just read the scenes of the fight. The hentai part is referring to the 11Eyes visual novel, not the anime because the visual novel has hentai scenes in it.

It's been converted into a console game after all. All H-games do this for the console conversion. Chaos;Head Noah does the same thing and so did Akaneiro ni Somaru Saka parallel. The extra scenario is a nice addition in term of plot because it intertwines with the pc remake plot and explains more on the concept of sorcery. You'll see extreme similarities in terms usage compare to TypeMoon. The shortcoming about this extra scenario is that it's too short compare to the pc, wayyy shorter.

Not much, the main difference are that all the H scenes are cut and a new scenario with the same world setting is added.
