You're right that nobody's ever really seen these battles in real life, yet they happen every day and the sperm whale is the victor pretty much every time.

When retreiving towed sonar arrays in the Navy it was not uncommon to find huge sucker or bite marks in the array itself where something had tried to eat it. An adult bull sperm whale is the size of an eighteen-wheeler truck, and it's so loud that one sonic boom from one is enough to destroy a small house, so the squid would be stunned for a bit, if it lives. No squid in its right mind would attack a whale unless the whale was a calf. When the mother whale comes, the squid usually knows to retreat.
