I doubt if any foreigner in the third world - esp. one as travelled as Bourdain - is silly enough to believe that their tourist dollars don't play a part in displays of local hospitality, whatever the happy fictions portrayed on a TV program. @somberlight I would eat a dog, it is still a source of protein. I wouldn't give a dog a higher status than say a cow, it is still food to me. However when it comes down to some of the vendors down in China, they do have a choice. They do have the resources available to them so that they can make something that won't give you many problems down the road. Why they don't is because they want profit.
