I think it's fantastic however I'm not sure what modifications if any were made to the aircraft she flies the reality is flying properly take two arms & two legs, two feet to control the rudder pedals & brakes, 1 hand to hold the control column & the other hand to control the throttle. Yes she can fly a plane & all power to her but her landing in a strong crosswind would be dangerous as it takes simultaneous control inputs of both hands & both feet to do it safely.
I had to look up the plane which she was flying as I couldn't believe it either. She flys an ERCO Ercoupe which uses a a two-control system linked the rudder and aileron systems.
This type of plane does NOT have rudder peddles (first that I heard for me!) and is considered a beginners plane that has automatic yaw correction.

Fred Weicks Ercoupe was a modestly revolutionary airplane for its time. It was probably the first general aviation airplane designed with a nosewheel and the first to be certified as non-stallable and non-spinnable. There were no rudder pedals—the twin rudders were automatically activated by deflection of the ailerons. Flying qualities couldnt be much simpler, exactly what Fred Weick intended. Ercoupe is as automotive as it was possible.
like ssssaaafff said, the ercoupe 415 has no rudder pedals. To add to that, her sport pilot certificate does limit her to fly this make and model only.

To answer angioplaster3's question, no I do not own the Ercoupe but I hope to one day! In my opinion, the Ercoupe is a masterpiece. If it hadn't been for ERCO creating it more than 60 years ago, I would have never had the opportunity to fly an unmodified airplane. To answer alashee's question, I don't have to work rudder pedals because the Ercoupe does not have any. The rudders and ailerons are interconnected. Thanks for the great questions!

Bauch.Man braucht das nicht nur für "Kunstflug" die sind auch für starke Turbulenzen, meiner Ansicht nach, lebenswichtig. Wir hatten solche "Hosenträgergurte" im Schulflugzeug, im
Segelflugzeug und natürlich auch im Jagdflugzeug !

The plane is an ERCO Ercoupe. This plane has no rudder pedals by design. Rudder and ailerons are controlled with the yoke.
