To the "just bring water" folks, it really depends on the type of camping and hike. When backpacking you are often out for a few days to weeks at a time with all your supplies carried in and out. If you are hiking and doing strenuous work it is not hard to drink a gallon of water a day. I typically carry 2-4 quarts at a time and the rest I get along the trip, so any and all of these methods do come into play at some point.

you can also(which is way cheaper) take a plastic garbage bag, split it so its flat, make a tent out of it, put cups at the ends so the water,when it evaporates, will drip to the cup.

I recently made a still just for that purpose. I bought everything I needed from the hardware store.

Here's what I used:

Tea kettle

rubber stopper

meat thermometer

copper tubing (15ft) 1/4"

styrofoam cooler

2 flare nuts

1 flare union

I cut 12" of tubing, drilled 2 holes in the stopper (1 for the tubing, the other for the thermometer) and joined that to a coil of tubing suspended in the cooler. It's easier to explain with pics. But it's quite easy.
