I decided to do my own research and it took me 10 seconds to find that Caballero doesn't establish his levels of protection, the National Institute of Justice (which I'm sure you're aware is a branch of the USDOJ) makes the standards. Mini Uzi's are a level II, MP5's are level IIIA. Don't take my word though, read all about the testing procedures here:

@xeonfuze nope, the armour absorbs the energy of the bullet, thats how it stops it. a 7.62x39 hurts like a bitch and leaves a bruise, but I can't speak for any other rounds.

Each clothing item has built in ballistic panels. In clothing with button or zipper fronts, there are two protective panels which overlap when the jacket is closed. In the back there is one ballistic panel. Each panel is made of a para-aramid synthetic fiber that is tightly woven and layered. The panels are soft and flexible and work like a net, preventing the bullet from puncturing through and "catching it."
