You are referring to the book test method as taught by Joshua Jay in his book, "Magic: The Complete Course," which is used to allow the magician to force a word on a volunteer. I don't believe this is the method Criss Angel is using here, however.

Should be forced to think of reach, play it again and stop several places, you`ll see the word reach repeats. In all the haste you would pick something, but the limited choices and time pressure of not loosing the moment and having no word at all lets you pick reach. It was there twice, so why not pick it?

reach was not only the shortest word, but the one that stayed visible slightly longer. As you can see, mentalist tricks like this are RARELY 100% accurate.
