Flat surface is the better way to go. Reason being when you crack on the corner of something there's a chance some of the outside of the shell will go inside the egg and contaminate the eggs. Generally speaking a lot of stuff like salmonella and other impurities are on the outside of the shell.

If you spray your newspaper with a little Veggie Oil it will increase the burn time of your paper and start the first time every time.
