You can kill them with enough normal damage, but they'll eat your ammo up somewhat quick if you decide to do that.

You have to beat the game on Normal difficulty to unlock Professional difficulty. Here in America, our version doesn't even have an Easy difficulty. For some reason, Easy was added to versions of the game in countries that use the PAL video standard.
