  • Do they come out of the foil wrappers easily and also should you stick them in the fridge to cool, or freezer, or counter?

  • @EscapeMyName I used those foil candy type wrappers suggested for hard candy. A couple can be a bit of trouble but mostly all peel off easy enough. The candy will become very hard very quick. There is no need for any refrigeration. The counter is fine. You have just a couple of minutes to pour it into the moulds. You can also just pour drops on to a cookie sheet. A quick spatula scrape and they come right off. The trick to candy is the correct temp. Good luck! KtC

  • Dumb question....how do you use a candy thermometer?

  • Not dumb, there is a correct way. The one I have is a clip on type (clips on the pot). The end in the pot should not sit on bottom but just a bit higher and still in the liquid. Then just wait until it reaches the desired temp. There are electric ones. They are fairly cheap at the local Mega-Marts. KtC
