  • @TheDeadlyFungus Bolognese derives from the italian city "Bologna". If you make a bolognese it should at least recall the traditional sauce... Otherwise, you are making a good meat sauce AND using the wrong word to call it... It's like serving an hamburger with a potato instead of the meat... It can be good, but it's not an hamburger ;)

  • I don't doubt this sause is good. But it has NOTHING to do with the so called "Bolognaise", starting from milk and arriving to the Worcestershire sauce... That one is simply ridiculous and it's quite disappointing seeing a traditional recipe transformed like this. Cheers from Bologna!

    Did you know that worcttsttsesdg-sauce( as most ppl pronounce it^^ ) is a lot like the old roman garum?

    Thus, it fits into italian dishes.

    Though I would never use a sauce that is mostly rotten fish :D(yes, I know, fermented is not rotten- but it reeks alike)

  • I know more than anybody about Gordon Ramsay.He is one of the best chef 's on Earth and he has the right to create signature dishes. is clear for all that it is imposible to create a ragu in 30 minutes . you can put different kind of flavours in one ragu, but never add herbes .Gordon likes very much spices .thanks to all , and we have to look for the final result

  • On Hells Kitchen, the being mean to the contestants is just an act for the ratings. If you worked for Chef in one of his restaurants, he wouldn't yell very much at all because at that level of cooking, the cooks are all pro and can cook circles around most people..

The funny part is, we french don't get all pissed off when Ramsay cooks our cuisine, because we appreciate a three star cook who can make a real good coq au vin. And his is bloody delicious. So all you haters, fuck off. You don't like it? Don't watch and don't eat it!!!!

  • @ItsSomeDeadGuy I think it's because on Hell's Kitchen everyone expects him to scream and yell all the time- that's probably one of the things he gets paid for. On this show he's teaching people to cook and he shows more down to earth qualities. I completely agree with you.

  • this is his version of the bolognese.... he doesn't made the original version..... the original version is made with onion, carrots, and celey and extra olive oil for SOFFRITTO after that you have to brown the mixed meat (pig and bovine) , and add tomato concentred to make more red the souce, and finaly add tomato sauce and salt and pepper that's all THIS IS THE REAL ORIGINAL RECIPT TRUST ME I'M ITALIAN.

  • I remember that I work with my chef to make bolognaise from scratch in Italian restaurant. It really brought back my childhood memories back in Hawaii elementary school called Kipapa. I had a macaroni with bolognaise sauce topped with cheese: DELICIOUS! I wish I won't use canned or jarred (e.g Prego) pasta sauce. But Chef Ramsay nailed it.

Because any real "chef" would know this is only a representation of the (onion,carrot, mince, paste,tomato chop,wine,oregano,garlic) template to be interpreted while honoring the heart of the dish itself. I like to add some cinnamon and chili flake and basil to mine. Is it not a real bolognese? because I learned the cinnamon trick from a family in Bologna when I was there in college.

  • @napulegno86 Why not? It is a really good recipy.one can always change the worchester with another ingredient. The basics for a good dish is in there. And he never said he wanted to make traditional Bolognaise.

  • I added Italian sausage, smoked bacon and a touch of sugar to mine. Adding these two different types of meat makes it much better. But all in all I'd say this is a good recipe to follow!

  • Do everything mentioned but leave out the worcestershire sauce! Instead, just add 2 or 3 bay leaves, 1/4 cup of vegetable stock, a pinch of dried chilli, thyme and a small pinch of brown or palm sugar to take away the tarte flavour of the tomatoes and some fresh (torn) holy basil.... My bolognaise will beat Gordons any day and I'm not even a chef, I just love to cook.... Don't get me wrong, Gordon is brilliant and I consider him one of my idols.... In hindsight each to their own I guess.
