  • mario, one of my favorites has not been entirely forthcoming about his influences; he borrowed things from both Aubergine-era Gordon Ramsay and yes, Heston Blumenthal. he is, Mario, an incredible chef. The Ramsay thing was more flagrant, Blumenthal did NOT invent this method but popularized it before Batali.

  • I'm not sure where he gets his dough but in most states it's against policy for a pizzeria to sell raw dough.
