The fighting spin-offs all get so many superior themes, they overshadow ZUN's original compositions. It's not necessarily a bad thing, since ZUN's compos are ZUN's compos, and nothing can change their awesomeness. And if ZUN's compos had such a full sound, they would no longer be in his style. It's just that I wish MORE official Touhou music sounded more like full songs, and not just game tunes.
