i just made these the only things I did different, I cut open the potatoes before baking, placed them down on a sprayed baking sheet covered it with foil and baked at 400 degrees for 30 mins. so it's like a roasted baked potato. I added the pineapple but instead of ham I did use bacon, also I mixed in some shredded cheese dash of salt and pepper. They came out really good. Thanks for the recipe.
@sweetnnazty8 I'd recommend frying the bacon first if you want it crispy, but it's not necessary to cook the bacon first, as it will cook in the oven ;)
I am going to make these now! Kid's are in bed and I wanted a yummy snack. My mum used to make something similar when I was a kid and I have never been able to figure out how she did it lol makes me look silly considering how easy you make it look :p Thanks mate :)
I'm sure you just used your hands while cutting in half for simplicity durring the show, but I wanted to mention a tip on it anyway. :D
To remove the inner potato: Hold the potato half with a clean oven mitt or kitchen towel. Use an ice cream scoop to scoop out desired amount of the potato.
I also use the ice cream scoop for removing hard boiled eggs from hot water (or the hot pan). The scoop (mine anyway) is the exact size of the egg.

Hi. This look really good. If we use bacon, do we add it in the mashed potatoes cooked or uncooked? Thanks!

I have just enough time for making dinner usuall after a big day at work, so making chocolate brownies, etc doesn't really happen. LOL
